Urban, EXCELLENT video!!! Like I said, I made a satirical one for the complainers. I would definitely add 1 tsp of baking powder per pound of finished masa. It appears that you made about six pounds of masa, so I would have tossed in about 2 tbsps of powder right at the end of the mixing. Then (weird but it works), taste the masa for salt knowing how salty your meat is. That balance doesn't change because of the cooking method (no water loss). Again GREAT vid! BEST EVER!!!
This is one of the best Tamale videos I have seen on Youtube. Thanks for the step by step! I know it is a little old now and I am commenting on the last video. Don't know if anyone else commented earlier but, the steamer you used is a standard canner. Thanks for your great video. I have wanted to try to make Tamales but no other video was this comprehensive. I am ready now, I will let you know how I do.
