hey make headcheese, they take the head and they boil it, except for the tongue, and they scrape all the flesh away from the bone, use everything they don't thow nothin away, they use the jowls, the muscles, the eye's and the ligaments, the nose and the gums and all the flesh and boil it down to a big chili of fats, it's really good, ya like it? .... well, sure i like it, it's good!
