That is superbly fresh shark. When fish still wiggles, you know it is good. But shark should never be eaten. It is terribly high in mercury. Being an apex predator, it concentrates toxins. Not to mention that sharks are overfished anyway.
@Elios0000 It depends on the size of the shark to a large extent. Bigger (older) sharks will have accumulated more toxins than smaller sharks. Tuna is also a large predatory fish and as such tends to have high mercury levels as it is making the comparison virtually moot. Certainly don't eat it every day, and it should be avoided by children and pregnant or nursing women. This is one of the reasons shark is a red listed seafood. Another is that sharks are over fished and need to recover
It could be the heart area still ticking a little, or some nerves from that shark, i don't know how that could be still alive like that. I'd still eat it, give me a knife and some salt and watch it disappear. lol =) LOVE seafood!
