Yum, I have never made truffles with cream cheese, just normal cream and sugar in my recipe, will definitely have to try it though... yeah, totally :-) if you can find the containers of dipping chocolate, it makes it even easier to dip the chocolate. the BEST way is probably to temper the chocolate, but I never have the frickin patience for that. as long as they are covered they will be nice and gooey. sort of sharp chocolate flavor. I hope you and your guests enjoy them! -)

Haha... I am very much a novice but have read all up on tempering chocolate and will probably try it one day but for the time being I'm just after the good taste part and not so much worried about the beauty aspect of the outcome and with three kids and not a huge amount of patience for the fiddly stuff cutting corners is the best way to go... I'm even going to buy a truffle scoop and see how that goes, alot less messy and hopefully a whole lot quicker too ;D

I love your coating process, along with the drizzle. I have to ask...did you temper the coating chocolate? I had heard that if you use chips, and bring them to...i think it's 90 or 91 degrees, you can remove the tempering step. That is the only way I've coated mine, and it's always an unpleasant experience. Never did I have the "super" liquid working state you achieved. I would love to know.

actually, nope. I just melted it in the microwave until it was liquidy. they weren't chips, but melted bakers chocolate. it doesn't have the same crisp bite to it as tempered chocolate, but i just don't have the patience! :-)

I never thought about...well, sort of pouring the coating chocolate...I would always try to roll the truffle using a spoon with coating chocolate on it...Never again.If I have to temper, i will...it's the rolling part that is a waste of time...never did drizzling or pouring come to my mind. thank you
