  • No, Heston - one of your ingredients was mushroom ketchup but your finished sauce was not.

  • Heston's Big Fat Duck Cookbook says 10g salt with 1.5Kg of mushroom to make the mushroom juice. This video says 75g salt. I've got the mushrooms hanging in my fridge and I'm getting lots of juice out with just the 10g, so it looks like the numbers are a bit off.

  • I've started to use dried up muchrooms lately....and so much flavor even if they've been dried up a long time ago! mushrroms really are a wonderfull thing!
