90 deg outside and I am making my first gumbo this afternoon...last time I tried a roux I burned up my damn spatula! Using chicken thighs, jumbo shrimp, and some non-union sausage...
What do you think of that Alton Brown method of making the roux in the oven. Is that non-union? I tried it and it worked with a cast iron dutch oven, but I am a lazy yankee who don't know no better.
I've done the oven method too on past videos, It works just fine. But you still have to add oil & get the roux hot so when adding the trinity it cooks the veggies & flavors the roux
They aint cheap, I bought the newest & largest capacity unit's they had. Those hold more dirt & run for longer on a single charge. Thet have smaller & even referbished units

I've used Zatarains Crab Boil before, and it made the house stink like an outhouse.
I mean it LITERALLY stunk like it was an outhouse full of runny shit!
