I'm a tankadin, and personally I don't like the way WOTLK is going to make us more like warriors. The stats they are changing on our tanking gear makes us warriors with mana. Maybe it's just me but anyone else feel that way?

Well, its a new class, gotta expect that, but I think it'll be much like when TBC came out - everyone rolled a BE Pally or a Dren Shammy because they were new to that faction, HOWEVER, it evened out after a while. People will test it, and then probably a lot will return to their original main.

...no, you won't. Beta is not 3.0. 3.0 will not have Death Knights, L71-80, or Northrend. Much like when 2.0 came out before TBC did, it's just introducing the new features but NOT the new content.

No, there is no more Judgement of the Crusader. Don't worry, though, they added it into the spells automatically by making them more powerful!

They will be releasing patch 3.0 in the coming weeks. WotLK will be released on November 13th.

They did the same thing with TBC, releasing patch 2.0 about a month before the expansion came out. Same concept - new talents and mechanics, but no access to new races, classes, continents, or leveling.
