  • Looks good, is that channeling starting at 23 seconds on the right spout of the portafilter, you will see it spit. Blonding looks like it happens at 30 seconds and is allowed to continue till the end. You can see the color change coming down the left side of the glass.

  • How old are your beans, Old beans will prodece a huge ammount of crema and look nice but taste horrible. Not sure 5 day old beans will make this much in my experience. Looks fun though :)

  • This is my favorite espresso video. I have been experimenting with variable pressure on my pulls using my lever machine. I have achieved similar results although not quite as dramatic. You have inspired further experimentation on my part. I have also found that a slow ramp-up yields great crema.
