There is a steering sensitivity option in the controls menu and you can set it to whatever you want.The best setting is about a third of the scale for the car to be stable and to steer more like a real car.And with the Driving Aid set to max for the car to stop spinning at every corner.

well, the video would look exactly the same as the gameplay you had while you were playing it. Fraps makes games slower than usual(ALOT) while recording thus making your video look like crap but still the same way you played it which was slower than usual. Youtube however makes the gameplay look much faster by making the video smaller, so what you see in my game "looks" faster than i when i played it when i was recording, hope that answers you question
