TIP for Pure Malai Kofta - If you want to make it with cheese only then add semolina or suji in grated cheese and make it in round balls. No other vegetables are required for Malai Kofta. Cheers.

I tried this recipe, it was fantastic. Everyone was asking for recipe.It takes only 30 min to cook since I microwave the veggie and potato. I will be cooking more of this item in my upcoming parties. Thank you vahchef for uploading such wonderful ways of cooking on youtube.
I made these koftas tonight and discovered that they fall apart when the oil is too hot. My first batch (medium temp) was great, the second batch was a disaster because I'd turned up the heat as an experiment, and the last two batches were fine because I turned the temperature down again. I suspect that a too hot temp may cause steam to build up quickly inside and blow the koftas apart. And turning them too soon didn't help. What a mess!
what happens when u drop your koftas in the gravy ..at that time consistensy seems ok.. but these koftas soak in lot of water from the gravy thus making it thick..in that case add boliling water to it....also when u fry onions n tomatoes ..make sure u fry them till oil seperates n then blend them ...u will never get a raw taste..
the koftas were just fine when i dropped them in oil. I did drop slowly. but after some time, when i tried to turn them, they sarted breaking up. I could feel how delicate they were. After few seconds, they started dis integrating. :(

Hi priya , you need more binding add some corn flour and also bread crumbs too help , fry only one piece and check it if it comes good fry the rest or else rectify the mixture
@impriya1984 Hi Priya adding a lil of rice flour also helps plus don't turn the koftas too fast... The oil too should be a lil more than medium hot( just a lil more)...
Another excellent recipe. However, I've noticed that many Americans (and I'd assume Europeans) strongly dislike the taste of Black Cumin (aka Shahi Jeera or Kala Jeera.) It is very strong and almost smokey. Smell some of the Black Cumin and see if it is offensive to you. I personally prefer regular Cumin seeds (Jeera) in recipes that call for Black Cumin.
Also, look out for spice mixes or recipes with Black Salt (such as in chat masala.) Often very offensive to Westerners.
its gud but its my experience that both things taste differently that u can also see. better if u can blend after making gravy . to clean the blend use hot water and keep it for 5 min then use liquideand clean.

hello Chef, Malai kofta recipe is excellent. I didn't added any vegetables to the koftas as my child doesn't like it. I made it with potatoes and paneer. The dish was mouth melting and tasted lot more tasty than any restaurant food.

Coat the Koftas in Bread Crumbs.
Spray a baking pan with oil.
PLace kotas in pan.
Drizzle oil over it
and bake.
Would this work as well instead of deep drying?

put hot water and a drop of washingup liquid in your blender after using it and turn it on, it cleans itself, then just rinse :D

from what ive heard no... if you can find 'queso blanco' its a great substitute.

Hi,Sanjay.I loved the way to gave the presentation.I tried this receipe but my kofta after some time started breaking and ended in a mess.I had added all your ingredients and also taken care of removing all water from grinded vegetable before adding it.can u help?

even i tried this for the first time in my life.....but it really turned out gr8. perhaps..breaking of koftas occured due to overcooking of koftas in the hot gravy.try this time again and be sure not to keep koftas boiling for a long time in ur sauce.

Wow Sanjay...excellent recipe. i tried tons of your recipes and they always turn out great. i have one question. do u use roasted cumin to make the cumin powder? bcoz in the store u get just powdered cumin without roasting it. thank you.

You are so cool. I just have one question. Do you have a tip about grating the paneer- its very soft and I don't understand how it can grate easily. Should I freeze the paneer first before I grate it or just grate the paneer at room temperature! THanks chef you are the best!
