It's been done on stage for years.

Holding unlabeled barbells that neither the tester or the subject knew the weight of would have been more convincing.
Especially if the subject could hold the weight successfully until the phone was turned on.
Also, some of the cell phones should have no batteries but be the same weight as if they did. Again, unknown to the subject and the tester.
For all we know, that woman is using varying degrees of force for the before and after.
