Seaplane is a generic term for planes that can land on water, they can either be 'floatplane', wich means a traditional land plane wich gear has been replaced with either straight or amphibious floats, or a 'flying boat', a plane wich has been designed from the start to be able to operate on water landing on their belly, shaped like a boat.

I've had the opportunity to see a retired Cat up-close at a small museum recently created on the Seaplane Base at NAS Whidbey Island. So awesome! (That's how I found this video, BTW- looking for Cat videos.)

It is amphibious. The difference is flying boats can only land and take off from water. Amphibious planes can land and take off from water or from land. @tompr91 Actually, this shot is real. The boat is there, the plane is there AND at the same time. They just messed with the depth. The plane is quiet a ways further away from the boat when it pulls out of the water.
