There is a Good Eats episode on YouTube called pretzel logic. Alton Brown uses a baking soda bath instead of lye to get the browning. I use the lye though and it turned out great.

For pretzels, the lye gives it the mahogany brown color. The egg wash is more for soft pretzels. There are web sites on the Internet that offer food grade lye. I haven't tried it yet. My pretzel experiment had an egg wash like yours.
Wow! You guys are bad asses! I love these videos... I have had some beers for breakfast in the college days (and still keep the tradition alive from time to time, but I never got to enjoy a german meal with them! Great stuff!

To get your pretzels to brown you need to use a lye or baking soda bath before you pop them in an oven.
Here's a good recipe:
