  • you are supposed to brew south indian coffee in small quantiites - in a drip filter. Not at all like this. I am not sure how much time you save given that a drip filter takes less than five minutes to brew coffee.

  • My wife is east Indian and her family is originally from Kerela - She introduced me to south Indian coffee and she essentially makes it the same way you do only she makes a bit larger quantity. I have to admit that it's the best coffee I've ever tasted, and I have been a lifelong American coffee drinker :-) Right now we are looking for someplace here in the USA where you can buy an east Indian coffee maker but I haven't seen any here. I suppose next time my wife makes a trip back home... Thanks!

  • Had my first cup of South Indian style coffee yesterday at a friend's house and I found it to be as good if not better than some of the Cappuccinos that I've had in Italy -- I'm hooked! Just out of curiosity though, what does the pouring back and forth do for the coffee? Thanks for the vid by the way!

  • wow... thanks for sharing that... I'll be over in the morning... I will make breakfast... LOL... I brew beer... and it is not a good idea to squeeze the grains once they are steeped... have you ever made your coffee without squeezing the filtered material? Does it make a difference?

  • @chyrd i do agree that the taste would be markedly better if the grains are not squeezed out after steeping, but the coffee would be much much more expensive, and this becomes a point of compromise for someone who loves to have atleast one liter of coffee every day ( like me ! ) thanks for your remark, its valuable .. cheers !:-)

  • This is absolutely wonderful. My grandfather owned a coffee estate in India. To this day, my dad makes mysore coffee in a similar manner. His coffee is the best. The old ways are sometimes the best ways. Thanks for sharing your technique.

  • never heard that coffee dehydrates drinkers .. and if that were true, i should have been fully and thoroughly dehydrated by now, ( i dont think i am, though ) because i have been drinking lots and lots of coffee since i was about a year old, cheers ! :-)

    84% paraxanthine: causes increased lipolysis, lipolysis being the breakdown of lipids such as fat, waxes etc.

    12% theobromine: dilates blood vessels and increases urine volume.

    4% theophylline, a substance that relaxes the smooth muscles of the bronchi, and thus is used to treat asthma and several similar annoyances.

    Each are further metabolized and excreted in your urine. Good for people!

    First thank you for putting this video. I was raised in Mumbai, and loved the filter coffee. Is there a faster way to make this :). If not, do you put the boiled in fridge?

  • am glad you found this method of aerating the coffee interesting . and in fact, in the places here where it is not considered bad manners, people do sip the coffee with a lot of air, making a lot of sipping noise and they enjoy the coffee so much for that .. thanks for your comment ! cheers ! :-)

  • glad that you too are a coffee lover,,, yes, the cloth has to be clean, clean and very clean, else would steal some from the flavour, then, for the best flavour, grind the coffee seeds just before making the decoction.. dont use previously ground coffee, also, if the coffee beans are not roasted properly, ( should have a shiny appearance ) you could re roast it in a kadai,,, all the best !

  • As I grew up we started using coffee filters and coffee makers and instant coffee's that never really catered much to my taste buds and gradually my craving started becoming more and more for a good cup of coffee.. but when I tried this out I did feel that there was a tad bit of taste missing although the flavor seemed good. Could this be cos of the cloth that we are using which may have starch in it?

  • This was how my patti (grandmother) used to make coffee back in those olden days (dates back to early 60's n 70's)..

  • filter is good for small quantities, and i found it gets blocked frequently, and i get much stronger decoction by this method...and more cups !:-)

  • I tried the method you had described, but though the strength is there, the flavor seems lost.That is in comparison to the filter.

    To make sure that this was not due to over heating, I made batches at 80 to 100 deg.Centigrade at 5 deg. increments.

    The lower temperature gave a weaker brew, but flavor was still missing.

    Maybe all that stirring is vaporizing some essential oils.

  • thanks for sharing your valuable experience ..yes, the flavor by this method is definitely lesser than that of a filter..however, i think the stirring only helps to make it thicker, getting out the higher boiling point fraction of the coffee.. and this is a compromise between getting very high flavoured coffee from a filter but fewer cups and one thicker but slightly lesser in flavour.. one way i get over this is by using a slightly diluted milk ..this helps to some extent ..anyways thanks !

  • How many days would the concotion last?  could you make a lot & store in the fridge for a week? Also, I live in New Zealand, so could you tell me where could get the peabury stuff. I think you get arabica & chicory here. thanks

  • the decoction ( concoction is a mix, decoction is an extract ) will easily last three weeks in a fridge ... peabury seeds may not be available every where . you could just use 80:20 of arabica and chicory ... all the best ! :-)

  • the combination i use is a blend 40:40:20 of peabury:arabica:chicory roasted seeds bought out , ... i've written down the entire process in the "more info" section of the video.. and thanks for your comments..

  • If you used 250 grams of coffee as in your video, how many cups will this make? If I just want to make 1 cup for myself do I use about 125 grams or so? Thanks.

  • theoritically, you can proportionately downsize to any quantity.. but consider this.. if you have to make one cup, you would use about 25 gms of the powder and have to use use about 50 ml of water... and you would get about 30 ml of decoction...just enough for one cup.. but then boiling 50 ml of water and making this might prove a little difficult.. i havent tried this but am sure it will work ..do let me know ! :-)

  • thanks for your comments .. if you are diluting the milk because it is too rich or creamy for you .. then you should consider that the "body" of the milk ( the "solids not fats " snf ) of the milk would also get altered when you dilute it.. and it is the body of the milk that carries the taste of coffee into you ..maybe you could try to compensate that by adding a little skimmed milk powder to restore the body to the diluted milk .. im sure you could try and get your blend in one or two tries !

  • mm traditionally the coffee is served / taken in a small tumbler / small vessel.. so that you could aereate the coffee well for enhancing the flavour..if you must have it in a cup then you need to first boil only the plain milk, aerate it sufficiently in another vessel, to a frothy consistency, pour it into the cup and add the decoction from the top ..usually about 70ml to 100 ml of milk for 25 to 40 ml of decoction works well.. hope i have answered your question :-)

  • I lovvve coffee! But my coffee done as u have said ,think, boiled a little more and so had a kinda dull taste. But i guess if done properly will taste the best. I use the filter south indian style generally.Will this be better than that method?

  • yes.. i have stored it for three days without refrigeration even during summer ( no air conditioning here !) and about a week during winters .. and under refrigeration for more than three weeks ( after which my stock got exhausted )
