I also like the fact that you mistreat the beef by putting your hands all over it and blatenly rub pepper all over it. KEY RULE HERE: handle the beef as little as possible!!...I also HATE pan frying!
The whole tenderloins you get at bargain warehouse grocery stores are NEVER going to be steakhouse quality - not by a million miles. They are selling you meat that's 2-3 grades down from fine restaurant quality, and that's why it is cheap. You get what you pay for. Pure and simple.
The only way to buy this cut is as mentioned in the video... at price clubs. I can go to my local Winco and pick up a whole tenderloin for between $16-20, that will make about eight 1.25" thick filets. That's somewhere around $2 per steak. I actually buy whole beef tenderloin more often than I but "cheaper" cuts such as Sirloin and Ribeye which oftentimes are more expensive at Winco.
Bacon has nothing to do with a filet mignon. A filet mignon is a part of the cows tenderloin that is especially exquisite (Filet mignon, kinda means exquisite part of the tenderloin).
How old is that guy? Didn't anyone teach that guy not to swing around the knife that way? And I used to like America's test kitchen but Alton Brown whoops their ass. AB is smarter than their whole team combined.
In my view I feel AB is more organized and goes into more detail about the item at hand. If you watch his shows he tells his viewers how to pick the produce, how to store, what ingredients compliments the produce and etc etc etc... Where as ATK shows the cooking process. As a cook I feel it is important to understand how to pick fresh produce.
"Red & processed meats cause bowel cancer, explained Amanda Cross, an epidemiologist at the National Cancer Institute (NCI). "This is the largest study to look at the effect of red and processed meat on multiple cancer sites, such as laryngeal and liver cancer."
Red meats included beef, pork and lamb. Processed meats included bacon, red-meat sausage, poultry sausage, luncheon meats, cold cuts, ham, hot dogs and low-fat hot dogs
It looks really good but I wish they were more specific on the measurements of the sauce. I know theres port wine, balsamic vinegar, shallots and butter but how much of each?
um.... how was it?

Actual instructions begin at about 2:40. Pretty annoying.

AB and ATK both have their places in the world of intelligent cooking shows.

Who else uses a stainless steel cutting board or am i all alone?
BlackSkullCorp 3 years ago
It is good - as most filets are! No stainless here - thick, old fashioned wood cutting board. Enjoy and Merry Christmas!

Are you supposed to cut meat on a wooden cutting board?
Zarpyzuluwarrior 3 years ago
if you wash it often enough then its fine

wood cutting boards have been around for hundreds of years...clean-enough = seasoned
