Okay Mr. James S. my good friend! That was quite impressive there. I have come out with a theory to why they exist. This is based on coding that I did before. I believe the sign posts were made as markers only they could see but have no other purpose besides marking activation spots.
Basically, what I am saying, is hat there are activation areas and they place in sign posts so that they could see the invisible spots while testing the game out. They could have used any object, but decided to...
... use a sign post because it resembled the most appropriate "marker."
Now, about those two sign posts. There must be multiple (two) activators which do two different this. And those two different activations combined act as one unit alone. But James I am quite impressed with what you have done!

There's two signposts under the ceiling in the castle because:
One of them you'd look at to go to the wing cap level
And the other is a Mario spawn point for when you finish the Secret Slide.
