I've been making this for 20+ years - 1 cup Mayo, Juice from 1 large lemon, Blend smooth, taste of mayo should no longer be dominant but instead lemony, add small amount of milk to smooth to desired consistency, small amount of non-vinegar hot sauce for color (Tapatio or cholula). Thats it - fish taco secret sauce - firehouse smash hit. No yogurt needed. Beer batter the fish for the ultimate combo, Corn or flour tortilla, fish, secret sauce, shredded cabbage and squeeze of lime.

It taste so good, ebtter then anything I tried, and she uses organic things pretty much, as you used things from bottles, she only uses like 1 thing from a can which is...i can't telll.. It can be done! You may have to get creative. I was very fortunate. I was at good paying job that I hated in the 90's. They had a rash of layoffs and I was able to take a great early-retirement package. This helped to pay for my culinary school, and my bills while I went to the year long, five day a-week, 8 hours a day school.

We closed Bar Miramar around 3AM, fell down the wooden stairs to the un-paved street below, stumbled on this little taco shop a couple doors down. He was open and introduced the "Fish Taco" ... and original white sauce. The recipe went on to open "Rubio's" Fish Tacos...
It all depends on what I am making to serve with the sauce. For fish, I like a butter sauce. You can check out my video titled "Butter Sauce" if you want a great sauce for your next fish dish!

San Felipe fish tacos are deep fried in a wok with oil older than the hills. I think they use talipia out of the sea of Cortez which give them a distinct flavor. You should take a drive down there. It's about 3 hours south of Calexico. Nice place to visit in the fall.
At the end of my Fish Taco Recipe video I mention topping the tacos with fresh cilantro if one prefers. I have never seen the cilantro in the white sauce. Is that how they do it in San Felipe?

This is a fish taco white sauce. There are other types of white sauces out there, including the basic Béchamel.
