Your horse has a lot of speed left to him as you may have already found. Appys are great for barrels. I have a 15 y/o that still does it and loves it. Do a lot of lateral work to get that head in control.
i started out by walking then getting faster over the weeks. i have an appolosa named sage just turned 4 may 5th. we have been practing them only for 3 montha i started slow every two weeks i'd step it up if she'd mess up a barrel you go back to that barrel and cirle 2times around it my horse learned not to be rude and not listen by doing that! hope this works! and more tips theres alot more message me!
its only his like 5th time doing it. i was just seeing how fast he cud do it. i dont practice like that all the time. i just felt like trying a bit faster.

pratice at a slower pace so that you and your horse are making all the right moves..and if you keep running him full blow he will become a hot horse
