i know that sith use red lightsabers...but why jedi use different type of colors?

The most deceptive of Sith would use multiple colors to add to thier deceit.

Of course you don't have to wander the galaxy changing colors either, just pick the one you want and lock out the rest with a simple, 30 sec. reversable modification.
