Plastic can actually have pretty good resistance, but the trick to that is because it is in boiling water, instead of a constant hot surface like a hot metal, in that case the plastic would melt instantly. Since it's in the water where the molecules are constantly moving it doesn't give enough direct heat pressure to the plastic in order for it to melt. The integrity of the plastic changes due to the heat of course, but it won't melt into your food! :D
