Except you add the file' and all the chopped seasonings to the stock when you first put it in and cook with the the sausage to start. Then add the chicken. But may I suggest peeled shrimp, or crawfish? Gumbo crabs? But you put shrimp and crawfish in last. They shouldn't cook as long as everything else, 1/2 hour is all that is really needed to cook. Could even add in some okra. But still very nice. You GEAUX girl!

The final product was EXCELLENT! Good food takes time and I'm glad I was patient!

hey drea! love ur vids!! i'm from new orleans and i've always found that chicken gizzards is a good alternative for the chicken breast..and chicken drumettes and hot sausage, the original new orleans kind lol!! just a suggestion, i'm 21 and rarely cook gumbo but i throw it all in and it works..give it a shot!!
I fell in love with gumbo when i moved to Louisiana!!! I must say I do rather the chicken breast!! I find thighs to add to much grease then you are stuck scanning the top of the gumbo to take the grease out!! Nice recipe!

I'll try a seafood gumbo another time..the way this one tastes, I think the shrimp flavor would get lost in it. everything compliments each other so well in this recipe.
