Its Called Tiller, it is used to taxi the aircraft on ground. The captain is aligning the aircraft with the runway center line.

@VikingAviationPhoto Are you planning on doing any dvd's of an american airline if i would make a recommendation even though i will probably catch comment heat i think a good dvd would be of the Delta Airlines B744 and A333 flight from DTW-AMS. Both beautiful airports on beautiful planes i think it would make a great video and lots of americans and worldwide people would buy it. Love your videos keep it up :)

@1982FMJ if I remember right (for boeing airplanes) the tiller rotates the nose wheel 70 degrees each side however the tiller goes about 270 degrees each side, I could be wrong though!
