It is actually sweet rice wine. Do not use rice vinegar for this recipe thinking that Mirin (sweet rice wine) and Osu (the rice vinegar) are the same. They are entirely different, and you would be very disappointed with the outcome. Also this is not a vegetarian dish, butter and bonito flakes are used.

How many pounds of plums, how much salt, how much rice? vinegar, and how long to pickle and dry. I guess I will just have to experiment if I can't find anyone to translate. I am Japanese. Let me try to write a detailed translation here.
1. Saute maetake mushrooms in heated butter, add pepper and salt, turn off the heat and put it aside.
2. In a separate frying-pan, heat vegetable oil or sesame oil, fry the tofu to brown.
3. Reheat the flying-pan that was used for cooking mushroom, add mixture of Soysauce and Mirin.
4. Garnish the Tofu with maetake mushroom, Katsuobushi (dried bonito flakes), and Negi onion (similar to green onion and chives).

hi , this is the translation , (this may not be perfect) but i hope its helpful to all
step 1. add butter to the pan and saute maetake(mushroom) , add pepper powder.
step 2. fry tofu in another pan untill crispy on both sides, remove to a plate.
step 3. add teriyaki sauce to the mushrooms , and stir till the sauce thickens.
step 4. serve mushrooms on the top of tofu , last part i am not very sure sorry !!
teriyaki sauce contains: Mirin (sweet rice vinegar, soya sauce , sugar )
