Hey, just so you know, I had to carve turkeys for about 300 people today. I've done this for a few years but it wasn't until I saw your video this year until I finally got it down and was carving fast enough to feed all the hungry folks. =)
I've used Gordon's techniqe to carve a number of turkeys and it works great. As far as heat, I deep fried a turkey last night, let it rest for about 20 minutes, and while the turkey was plenty warm, it was not scorching hot, and burning my fingers during carving wasn't an issue. This is not a tableside, traditional, Norman Rockwell, pretty turkey technique, but it still makes for a nice presentation, and for a family buffet line, it makes a nice looking and very functional presentation.
I start watching this video every year a few weeks before Thanksgiving. Dysdale is a true pro and a great teacher. He has made Thanksgiving turkey carving a breeze for me. Thank you Gordon Drysdale.

So long as you bring your bird to room temp before you cook it then stuffing inside is fine. It's basic food hygiene to handle food with clean hands, so it goes without saying this guy gas clean hands! @karn00maccom You'll want to keep it at a low 140(home ovens dont go that low) degrees and it should be fine. However it would be better to finish your bird closer to dinner time =)
@killedbysnape Probably, but I think it'd taste better letting the stuffing cook inside the turkey. When you take the stuffing out, the flavor would remain. But totally up to you. We always cook the stuffing inside the turkey, then scoop it out afterwards.

@killedbysnape Yeah, we scoop it out and make dressing out of it. My grandma does that all the time, and now my wife does. I couldn't make dressing if my life depended on it. lol!

Armed with my Wustoff cutlery and this video, I've been slicing the turkey neatly for the past few years. I always come back to this video before the meal each year for a refresher. seems it's very popular advice that you should cook stuffing outside turkey. why take the trouble, ect, ect. Perhaps it's easier, but I don't buy it tastes the same. Stuffing from a turkey is clearly better, and you can't get it the rest of the year, so I say keep stuffing!
seems like a waste of time and effort to put the stuffing in the bird, if all you do is scoop it out immediately. especially because you have to cook the turkey longer just to make sure the stuffing is safe to eat.

Beautiful carving job. But this bird must have been cooled off to some degree for you to be able to handle it so much. I'd like to see how to carve a piping hot (though rested) one, where you'd have to use a carving fork.

Really embarassing knife skills for a chef. Why is he sawing at the meat? Use the knife properly and make the slices with one stroke. That's why it's long: so you don't have to saw and shred that nice meat. You're fired.
I guess it helps to have a nice, sharp knife.

Really embarassing knife skills for a chef. Why is he sawing at the meat? Use the knife properly and make the slices with one stroke. That's why it's long: so you don't have to saw and shred that nice meat. You're fired.
