They are,"Traditional Contemporary," they don't claim to be a,"Traditional," Chinese restuarant.
Look up their state/county health inspection scores, they do quite well.
The food, itself, is of high quality, but the sauces are definately loaded with sodium and sugar... However, they never claimed
To be calorie free... Also, they offer a gluten-free menu.
As for Mexicans cooking the food, what's makes a Chinese person more ablento cool chinese food than a Mexican !?

i worked at p. f. changs and let me tell you that that place is so fuckin dirty. before when i worked at claim jumper they look through stainless steal with a high beam flash light. then when i got hired at p.f.c. i couldn't believe how dirty this place is, so much so that i will not eat at a p.f.c. in my life!

But still very high in sodium typically. A lot of East Asian cuisine is. Don't get me wrong, authentic Chinese food is amazing and very diverse and profoundly different from faux-Chinese American restaurants, but compared to other cuisines, it still has a lot of sodium.

OMG!!! No wonder the lettuce wrap at PF Chang is just so HORRIBLE!!! It tastes as if the meat has been soaked in tons of soy sauce. Terribly salty, I can't even taste the sweetness of the dish. Not to mention the price!!! with that kind of quality, it is the highway robbery.
