I think I get your point - I'm not a friend of remakes either, and when hearing them both again I do find Sinead's is missing something: it's this 'easy going' finger picked BANJO what makes Nilsson's original so special.
Otherwise, with a song like this, you can hardly go wrong ;-)
This song was written by Harry Nillson specifically for the movie "Midnight Cowboy" starring Dustin Hoffman and Jon Voight back in 1969. His "Everybody's Talking" eventually won out and this song was dropped. Both Nillson's and this version can be heard in the movie "You've got Mail". Nillson wrote many hits including, "Lime in the Coconut", "Without You" and others. Many fans consider him a great song writer. Sinead's version of this is my first exposure to her singing. What, are you crazy? IMO, this version is very good but Harry Nilsson's original is superior in every way: vocal, arrangement, instrumentation, delivery, feeling.... by far the best version I have ever heard.
