Easy. Load a save game right before final mission and start the fun. Wait till 3:30 and head to Harrington House, let the Preps see and chase you to Autoshop (Avoid Prefects on the way). The Greasers will automatically attack the Preps and therefore start the big fight.

Toward the end of the game only (Just before final missions). Get some Preps follow you (Make sure to avoid Prefects) and lure them to the Autoshop. The Greasers will come to attack the Preps thus starting the war
