The hiss you heard when you removed the weight was not excess pressure being released from the canner but rather air being drawn into it. If you leave it on after the gauge reads 0 psig, the headspace in the canner will continue to shrink as the whole assembly cools from 212°F to room temperature. With the weight still in place, the pressure in the canner will drop below atmospheric pressure and could potentially bottom out the lid in the canner making it devilishly difficult to remove.
