Great review. I just returned from a week in Brussels and toured the Cantillon brewery. I got to try this beer and I think your assessment of the taste is pretty spot on. It lacks sweetness b/c the fruit spends more time in the beer during fermentation and thus more sugars are converted. It's great stuff. And yeah, you don't see many (if any) men in Brussels drinking the mass produced, syrup laden Krieks.

Not much lambic about the timmermans. That is some sugary/sticky shit! Cantillion is genius!
