I'd like to see you go toe-to-toe with some of the instructors in this clip...I've crossed hands with Chinese stylists of this caliber before and I can tell you their techniques can negate strength and reach advantages. Scariest person I ever met is 5'6" or so and maybe a 160lb, and he moves so fast he blurs.
also do mistake training motions for application, the training motions are exaggerated versions of the combat technique to increase speed, power, and improve balance
in the ring, with common competition rules, likely not, but in the street, I would respectfully disagree. When someone half my size and disable me with a single strike to a nerve cluster, I think it would be plenty combat effective. That was Robert Lopez. His Wing Chun master, Sifu Augustine Fong, is in town and I've seen him in action. He is even scarier.

I've got a friend who is a cage fighter who is 5'8" and his street weight is 155 and manages his diet very closely, so...

5'8' and 155 that is good, that's perfect, but is not the same as a 5'6 and 160 :D
Bruce lee was 5"7 and weighted 133-125 lbs.

you can improve your speed power and all the other skills by doing weight training, plyometrics, isometrics etc... :D
we live in a modern world this is not ancient china, ask your friend if he does this type of training
btw I'm not saying the guy in the video is bad, he probably can kick my ass, but this won't work in the street or in the ring.
