You won't see much of a difference between 1080p and 720p until you get a TV like 40inch and besides, most of the PS3 games are 720p native - upscalling them to 1080p only makes them look worse.

As someone with a 32" 1080p, I can say I believe it is nice in some cases. While it's true that live action will probably show little difference because of the nature of how it works, it can make a nice difference as a computer monitor or for games (though most games don't support 1080p). I got a deal where I got it cheaper than the 720p model though. Otherwise, 720p is probably a good choice if you can get it cheaper or a better brand.
