I was born and raised in Gonzales, La. and while some of his techniques may be different, this dude knows how to cook. There ain't nothing wrong with how he does it. The only thing I'd do different than him on this roast is serve it with potatoes and over rice. This dude is good.

First, that looks more like a simmering stake than a roast. Second, vegies shouldn't be chopped so small. And third, a reduction sauce using cream and butter is so much better than gravy.
I used Extra Virgin Olive Oil and insted of cooking down the broth that far I put in corn starch to thicken it up a bit. More gravy for sopping up with your bread, the flavor is already there. Thanks, very good recipe.
