Betty, A quick tip as I pickle jalapenos frequently; use the melon baller from the small end to the cut, stem end. The seeds and veins come out, usually, with one scrape of the instrument. Also, if you don't own a melon baller, just use a small measuring spoon. Works just as well. Drag it, with a downward motion, along the vein, and all should come out, no problem. Love your videos. Hope that little tidbit will help someone.

Betty, I made these and my gang loved them. I avoided having to shift around the stuffing to make it even at the end by scoring the mixture in 3 parts then scoring those thirds in 4 parts. These are not too hot at all...just nice and spicy. Thanks, Betty.
@viperam57 Just buy or make bread crumbs (you can let bread dry in a low temp oven for awhile and then grind it up in the food processor)...and then season as you like. It's simple!
You could put some butter crackers or corn flakes in a ziplock bag, along with the spices you want (in this case maybe sage), and use a rolling pin to crush and roll the bag until the mix is very fine. For different recipes, just vary the herbs and spices you use with the crumbs. I hope you enjoy this recipe!
the seeds hold all of the heat so it wouldn't be hot at all. I reccomend covering your hands if you are working with jalapenos tho, I was deseeding one and one got stuck under my nail and I got it out but my finger burned for a couple days no matter how much I clean under my nail, and if you breathe it in it will make you cough and sneeze, eek
I've never heard of this dish before - l'd like to try it. I've also never seen sausage like this - pate-like in texture (I've only seen/bought the dried deli kind). Dumb question: is this cooked, ground sausage you have or is it ground raw sausage that you have to cook? Thanks!

My nephew when he was 8, made these for me, while he was at camp. They were awesome beyond reason! There were only (if i remember) 2 different modifications he used, when he brought them to me.
- He added tomato sauce in the filling.
- He also used red and orange peppers, and added some of the seeds in the peepers as a garnish
Whatever the less, they were still awesome, and I have no doubt these are to. Best of wishes to you betty!
