Sugar. Good question. This recipe is a good one, though what you can find in the street vendors of Thailand is slightly different. Instead of using 'paste' for a dish like this, lots of minced garlic and thai chillies are used. The little amount of sugar is always added into most of the Thai dishes to slightly cut down the 'too spicy' taste in the dish. The chillies and garlic are not lessened, because that's just how thai food is - rich, pungent, and awesome :)
