Yep, I'm with abfrische ... I've tried different beans, grinds, tamps and amounts of coffee in the basket and my shots last for around 20 seconds and with nowhere near this crema. If a shot takes longer than 20 secs for me in generally comes out burnt and bitter. Can you give any tips on what you do to get this? Any type of beans that are better than others? how full is the basket? grinder and settings? Help me please! I want coffee like yours!! :)
@GusOo2 I've found that my Pavoni really really does wonders with Counter Culture's Toscano espresso blend. It's an extremely forgiving blend and gives up massive crema.

At 1:40 you can hear hissing from water/steam escaping at the group head joint where it meets the tank because he is applying so much pressure. I've also have the best results using quite a bit of force. It took a ton of experimentation to find the right amount of pressure to apply.
Looks delicious! I'm new to the art of coffee making. Just got my own La Pavoni, so i'm gonna start to experiment and try and do it as good as you. It was beautiful!

@maciejwrotek It looks cool; espresso machine bling.
It also allows you to see how even of a tamp job you did by how fast/slow/even the espresso flows out.
Some claim it adds more oxygen/air or improves the flavor by avoiding having the espresso run through an invariably oily/dirty spout.

nice pull !! i have an europiccola, how did you get a nice 30seconds+ extraction ? i pulled on mine and i merely get 13-15 seconds of extraction.
