If possible, always use coolant. Stainless does not transfer heat well and that is why it kills tooling... Slower RPM rates for larger holes and as heavy of a feed as you can manage help. See the drilling charts on Drill-HQ's web site for great starter numbers - all presuming the use of coolant.
The key to drilling stainless is slow speed heavy feed. However I have never used a hole saw to try to penetrate stainless. In my environment, I would use an end mill on a milling machine. You could also use an oil to help keep the cutter cool. Good luck
