  • can u use reg vegie oil instead of peanut oil does it make a difference...?

  • @alyssahtr You can use vegetable oil instead of the peanut oil. I prefer peanut oil simply b/c I like the way it fries - but it's basically the same :)

  • i did everything right but when stir frying it, DO NOT ADD THE SALT AND PEPPER. makes it WAYYYYY too salty, unless you want it extremely salty be my guest.

  • @iMooglie You may have used regular fine ground salt which would make this too salty; but if you used the Sea salt which is larger (like little rocks rather than fine) then it shouldn't be too salty :)

  • could i remove the shell anyway and it still be ok??? I have had them with the shell and just don't like the shell on what do you think? :)

  • @mattsthoughts2010 I made it with the shell off and it turned out perfectly fine. This may be a little too late, though. :o

  • I have had the salt and pepper shrimp with the whole body. Head, legs and tail. Also, It looked like the plate had little pieces of fried garlic mixed in as well. Is this basically the same recipe as well?

  • @cardona007 Yes, most places leave the head on and sometimes the tail - not sure about the legs though :)

  • @mrzfebo I usually just use regular black pepper. If you want them spicier you could use either szechuan pepper or the chili peppers as well :)

  • @AsianCookingmadeEasy another great tip. Toast the szechuan pepper corns in a hot wok until the aromas start to come out and beat lightly in a mortar.

  • @Lvrebel3 You can deep fry them at 350 - but just until they turn pink. Then use a regular pot to toss them with the salt and pepper :)

  • I thought you're supposed to use szechuan pepper instead of ground pepper.

  • @fyrblaed You can use either ground black, szechuan or white pepper for this dish :)

  • To each your own preference people! Shrimp heads SCARES me, so I prefer them headless. Although I may cook these with the shells on, I'll take them off prior to eating. But I do believe they are a good source of calcium!

  • You can leave the heads on if you wish. But I think that most people - those that I know anyway, prefer this dish with them off :)

  • Thanks for replying so quickly. Some of my favorite restaurants have a few salt and pepper recipes: calamari, chicken wings, smelt (of course), shrimp, pork, chicken (probably breast pieces). I like the coating of corn starch for crispiness. I learned that from you.

    Can this recipe be used for salt & pepper smelt? Can I add sliced, mild jalapeno peppers and green onions for some kick (because I like being kicked around) ? Do you have any unmarried twin sisters in California? Just wondering.

  • I've never made salt and pepper smelt, but I'm pretty sure you need to coat them with flour to give them a crunchier texture.

    No I don't have any unmarried sisters - my little sister is married too.

  • I love shrimps but has to be cleaned and deveined! There are restaurants, that leave the veins of the shrimps. nasty. that is the shrimp intestines. You did it the right way!

  • You're actually suppose to eat the shell and all. They will be quite crunchy, and if you don't care for them, of course you can take them off :)

  • Some people make them with the head intact. I personally prefer them without :)
