I tried making my own chips a few years ago, and it was a disaster.
But your vid. has inspired me to try again. I was thinking, "Now just shake on some sea salt, pop in the DVD, and you're all set." (A little sour cream & onion dip wouldn't hurt, either.)
I think I might try a batch with peanut oil, instead of canola though, as that works well for my french fries.
@skeilak Peanut oil works well. The chips take little time to cook so do not leave them in there too long. Also, add (quickly) the chips one at a time if possible so as they don't fuse together. Some things take a couple of tries to get right. cheers! KtC
@gotahc for cuting u can use cabbage slicer (grate or how its called im not sure) with adjustable blades...... it work perfect and you always have the same thicknes of crisp...
@Johny40Se7en Canola oil. Nice clean pure canola oil. Not much bad about that. You imply they are fried in animal fat lol Deep frying is fine as long as it is not a daily thing. Moderation with some foods is best. cheers! KtC

The trick is to get them out as they become golden (they will continue to cook for a bit after being removed). They also have to be paper thin. Too thick and they are more like a thick french fry. I had a clip that I excluded showing not to use the grater. It makes too large of slices for this purpose. However, a mandolin slicer works well. I suppose whatever works in the end but you really need a paper thin slice or you have flat french fries. cheers! KtC
The vinegar would evaporate as soon as it hits the oil. Try the vinegar after cooking with salt. Just a bit though. Too much would make them soggy. cheers! KtC
as KTC said, try putting vinegar on them after. Use a clean spray bottle (you can buy one at a dollar store/walmart for a dollar or so) and load 'er up with vinegar and mist it with that. no sog :)
If you have one of those spray salad dressing bottles, use that.

@cartouchator Vinegar isn't my flavor of choice, but salt and vinegar chips aren't that bad. I prefer other flavors, but they don't have the actual vinegar taste like what you'd have on fish and chips. When you buy salt and vinegar chips it's just more of a sour tangy flavor.
Now this would make some good Potachos, load it up with pepperjack cheese, salsa, sour cream and green onions... it doesn't need to be said how good it is.....

I used canola oil. For frying I either use that or sunflower. Each batch from when you start adding chips should be about 6 minutes/ a bit longer until all are crispy/ golden. (they will be floating around). I do not use much oil and try to show when I can. Just do not crowd the food. I use a large saucepan adding oil only up about a third. I reuse most oil until dirty then replace. A deep fryer is great but not always handy. Good luck! KtC
Sometimes. I try to provide an idea visually. However, this is actually straight forward. I enjoyed this one. I was wrapped up in about 40 minutes. No trouble at all (I have made them quite a bit before). The time is cutting them (about 5 - 10 minutes, not sure). Cooking is easier than French fries for they zap up quick and just float around. Now, take the crisps and sandwich them with a thick slice of cheese between your favorite sliced bread and, wahlah (what's the correct french spelling for that word?), you got a tasty treat!
