  • lovely gumbo--I made a big pot just yesterday for 17 of my family and friends. one thing - brown stuff on the bottom of pans- never never let it go to waste. pour in a little stock or beer or water -scrape it up- and save it for later or use it in the gumbo. you made my eye twitch waahing that out- and i like the iqf shrimp in shells to make my own stock with after i peel them. a little more trouble but i like it better than canned again nice job

  • I agree, he made a beautiful and tasty dish, BUT THIS IS NOT A GUMBO. This is a Shrimp Stew. Any Cajun will verify my statement, No gumbo here.......!!!!!

  • this recipe looks great, but i have one comment, i like to use bull shlong meat instead of bacon its normaly creamier and more bitter do think its good substitution for the bacon in this recipe

  • Great video!  A good roux must be watched while cooking at all times. If you don't it will burn and all that hard work is for naught. LOL Starting over will make sure that you don't ever do it again. Made me want to make a big pot of gumbo even before Mardi Gras...it's just too darn hot! BTW...the fond looked great to me. :-)

  • Unless the fond is charred, the flavor is still really good when it's dark, especially when you're going with a dark roux as well.

  • Why clean the pan? :) A bit of liquid would deglaze all that lovely burnt-on stuff and add to the flavour!

  • I don't like it when okra goes all slimy I used it in a Cajun soup once and it made it slimy. Other than that your dish looks amazing. Plus I agree - don't wash the pan.

    Well Jo Ann, I felt that the fond was too dark for me, the fond was also made up of a lot of okra slime that was (in my opinion) burning on the bottom, sorry!

    The raw shrimp cook in the hot mixture, I used raw shrimp.

  • Don't wash. I type well. But all the fond on the bottom of the pan makes your roux so much better.

  • I guess okra is an acquired taste? It's a Southern thing?!  :) My son's girlfriend is from Brunswick, Georgia. He bought me a giant bag of frozen okra. I smiled and said 'Hum' what am I going to do with this. Years ago I think I had okra and did not care for it. Slimy stuff when cooked! I guess nice for those that like it or are in love with the cook! :)

    The big bottle of hot sauce is Valentina.

    It come with a red label and black label.

    I prefer the red label, it is milder, but then I have never bought the black label.

    It is my favorite hot sauce, not too hot and almost a lemony taste to it.

    I like to try different ones, but the ultra hot ones are not for me.

  • @freitasex i used to love super hot sauce, but in my old age it does not agree with my tummy. i have been looking around for a flavorful mild sauce to replace my beloved pickapeppa sauce.

    I looked at my bottle of Valentina just now...

    The label is yellow, don't know why I had red in my mind.

    Yellow label with green writing and a splash of red in the shape of the "State" that is is manufactured.

  • @freitasex You're right, I tried it as a kid and literally threw it all up hahaha. I tried to make it taste better by putting various condiments on it, but I think that made it worse. My parents were trying to make me eat it lol! Don't worry about it now, those are good memories now. There's very few foods I don't like, and even those I'm willing to try again if prepared in the right way :D
