You or someone who knows how needs to re-set the trim limit switch. You do that by turning the round pucks on either side of the outdrive so that it will not allow the trim to go up so high. The one on the left side as you stand behind the drive is the one that needs to be turned down some.

Baja's do not have a high X dimension so to get a rooster tail like you did here, it has to be OVER trimed Do a GOOGLE search for "MotorsbyShooter" or search YOU TUBE. My best friend has a 232 and I have a 290OS and I know Baja boats, but what the Hell...your boat and it WILL be your expense. The U-joints WILL let go at some time and wipe out the gimble assembly. Being that you are in Europe...major expensive.
Loved the boats and the video. I have 1996 Baja Islander with a 350 in it. Bout to make it a 383 stroker.

only the normal trim
and the normal trim is there for triming
