  • lol...but that broom is only for the grill. He wont use it anywhere else. The only thing that the vegetarian south Indian will be bothered about is he used the same turning tool for the egg spreading.

  • @capuletxx err.. That is a broom made from the leaves of the coconut tree , and used for cooling the stove ONLY..its not used to clean toilets

  • @schuliger The broom is only used to cool the plates. If you watch some dosa cooks they may have a bucket of icy water nearby in plain view. Basically the broom allows plenty of the icy water to get absorbed. This is then splashed onto the plate to cool the top surface. Almost immediately the dosa mix is applied to the plate surface whilst plate is cool. You can see it is easy to spread the mix when the plate is cooled.

  • Cool! The egg like that is traditional of Galettes in Brittany, France. These are very similar to galettes, the only real difference is they take buckwheat flour. :)

  • lmao i know, i get the 'gits' dosa packet n mine either break cus ther too hot or they just never spread fast enuf to be thin. Uusally lumpy however im sure with time theyl get thinner n thinner! gl

  • Using a broom is common to many classical cuisines. Thai cooking uses a shorter version too. The unsafe part with these street cooks is the plates and tumblers. The stove is way too hot for any GI microbe to survive.

  • come on dude. Your thought are too cheap. Just because somebody use a broom it doesnt mean he is ignoring the quality of the food. Broom is a concept which spreads the water evenly and he uses this to cool the plates. This food is better than days old bread packed and sold in the shop which often gets fungs in US...

  • yes.. and obviously the brooms sole purpose is to clean the pan only. It just reminds me of my college days... simple hut food! one days expense was Rs. 30. Just ten years back.
