Oxtail is primarily a textural thing. It contains a lot of cartilage and is excellent in stews or used to flavour broth. Same for bone marrow - It's used for flavour and texture in soups and such. Bone marrow is incredibly iron rich and has many health properties.
My mom fed bone marrow soup to my sister when she was pregnant and the baby she had was absolutely perfect in every respect. He was walking at eight months. I'm totally convinced bone marrow does positive things for the fetus.

you guys r full of shit. oxtail is expensive because oxtail or most meats for that matter isnt in the japanese everyday diet. just how you can end up paying 50-60 bucks for a good plate of traditional asian food here in the states, since it is everday in Japan it comes cheaper. assholes.

When my boyfriend was serving as a US Marine in Japan they ate cat. And you can rat at gourmet restaurants in China. You can get pretty much any edible animal anywhere if you try hard enough. It's mostly in America that we have taboo-animals that it is frowned upon to eat.

When was your boyfriend in Japan? I doubt very much that they ate cat - it's just not a meat that you get here. Horsemeat and whale, no problems but there has been no culture of eating cats in Japan. I suspect he just might have not understand the translation or someone was playing a joke to see what the foreigner would believe.
Rats on the other hand - some Asian cultures like Thais eat rats but not the rats scavenging around dumpsters. These are larger types bred specifically for meat.

I like episodes where the chefs smile when the ingredient is revealed. You can see their crazy ideas in their eyes. I also like episodes where the chefs panic when the ingredient is revealed - if the chef panics, it usually leads to crazy inventions.
I was wondering how they would manage oxtail in an hour. Both stews sound good. I love marrow, but I don't think I could bring myself to eat horsefat.

No, it is the tail of an Oxen (singular ox) are cattle used as dual-purpose animals: for draft and beef.
And a mane is the hair that grows from the top of the neck of a horse, so i guess it's the stripe or fat that's under it.
