Nice video. I've actually cooked up the large flowerheads of the wild milk thistle, Silybum marianum, and they were very delicious, like artichoke flowers. But there was so much work involved, in trying not to swallow the thorny bits, that I did never feel motivated to try it again. I wonder if I could've used the stalks on those, as you do, here, with Cirsium? I wouldn't like to get a thorn stuck in my throat or tummy! ☠
@DGAF2000 Isn't milk thistle Silybum marianum? I think the Latin refers to the white milk like markings on the leaves--presumably the Virgin Mary's milk! I've cooked the flowerheads on Silybum marianum, but the tiny thorns were so problematic--worse than fishbones in the throaat! The hearts were as delish as artcichoke hearts, though. Very nice. I don't recall trying the stems, but now I see Feral Kevin making use of the stems, it would seem a very good thing to try! As no thorns to catch one!!!

I tried them and they are delicious. Are all thistles edible? We have about 3 different kinds here.

@NewEarthWellness As far as I know, all true thistles (Cirsium) are edible, but many are not choice or tasty. Cirsium is a huge genus, I mean huge!

Canada thistle is edible in the same way, yes, however I have not tried it myself. It may not be as choice.
