  • Hi,

    I use Indonesian palm sugar called Gula Jawa. The picture of is in this movie. It looks like a cylinder block, the outside wrapper is plastic, marked with GULA JAWA. I don't use the pale kind and always buy the soft Indonesian Gula Jawa. It tastes better too.

    Regarding the dessert you are talking about. It is familiar. Does it has banana in it? We call it Kolak. It is common to serve coconut milk, gula jawa, pandan, and a bit salt as the sauce in Indonesian desserts.

Couple of questions - the palm sugar you used looks SO MUCH easier to handle & A LOT darker than the ones I buy from the asian market - they are a bi@tch to chop & dissolve and almost always end in some bloodshed! What makes your kind different? I also like another southeast asian dessert that uses coconut milk, sugar, pandan, tapioca, bits of taro, and presumably agar. Do you know what it's called and can you please make a video of it if you know how? Thnx

  • If you don't like coffee, you can make the top layer only, the creamy part with coconut milk,Indonesian palm sugar, vanilla extract, and pandan. Apple juice will not be a good substitute. I actually like the creamy layer better. Pandan leaves can be found in Asian markets in metropolitan areas, in frozen section. Thai, Vietnamese, Burmese, and Malaysian also use pandan so usually these leaves are available in Chinese/Asian markets who supply Southeast Asian ingredients.

  • I'm not too keen on coffee, so this may sound weird but could I replace the coffee with apple juice?

    And the pandan leaves, can they be found only in Indonesian shops, or would other Asian shops have them too (Thai, Chinese etc.)?

  • To gel 2 cups of liquid, you'll need 1 tsp. agar powder or 2 Tbsp. agar flakes.  So for 4 cups, the answer is 2 tsp. agar powder or 4 Tbsp. agar flakes. For agar flakes, you'll need to soak the flakes in the liquid for 10-15 minutes before heating them up.
