None. Besides things like weight and height obviously. The only official limit is that you need to be 16 to go solo (at least in the UK)

here you need to be atleast 1:55 meters tall and 55 kg

The planes are Diana2 and ASG29. The "hill" is a "Żar" mountain (Międzybrodzie Żywieckie near Bielsko-Biała) and it isn't a lake on the top of the hill. It's a dam.
