    朱先生和家人大概知道西洋人則特別喜歡故意發酸(sourdou­gh 酵母發酸)的烤的法國式麵包,但酸味的確不適合傳統的東亞口味、­尤其考究的中式麵食及麵點。朱先生也知道在以烘烤麵包自豪的法國­,傳統的手工麵包店的師傅們也是在清晨1、2 點時即上班;因為工作非常辛苦、加上現在的社會層面變化太多,縱­然傳統的手工麵包好吃,願意從事這行的年輕人越來越少,所以造成­法國文化當今面臨的一項顧慮。相形下,製作故意發酸的法國式麵包­比起朱先生的(不能發酸的)老麵饅頭實在太簡單了...
