I always liked that quote. There was also one by the Maharishi about how God is a tree and we can only see him through the mist, each religion mistaking a different aspect for the whole of the tree.
As for why questions, I don't think we can escape them. Even if we give the answer "there is no reason," we are still left wondering why there should be beings capable of asking why in the first place, especially in a universe that supposedly is completely indifferent...
The question for me is not why God is a person, but why matter and energy should have evolved personality as human beings if no prototype had already existed?
I think of the mandelbrot set, with a very simple equation infinite complexity is created. Perhaps the Why is a very simple equation. Perhaps this is why it has been so elusive. It may be right under our nose.
I am trying to dumb down the debate a bit so that the rest of us can keep up.
So in reference to the personhood of God, you say god is the original not the likeness. It could in all likehood be man that created god not god that created man. I guess both are possible, my question is which is more probable?
Maybe "God" the force that created the universe, created man which created "God" The mythological man in charge. (parallel thinking)
Man creates gods constantly. I wouldn't deny that. Today our civilization's god is money. It is quite an ingenious religion (capitalism), as it relieves humanity of all responsibility to justice and goodness, leaving it all to the "invisible hand" of the market.
As Voltaire put it, "if God did not exist, it would be necessary to invent him."
I think there are legit reasons for keeping a true, non-invented God in our picture of reality, though. Perhaps I'll make a video explaining why.

"Spirituality" is a worthless word. So is "materiality." They are both suitcase words meant to apply to everything and anything.
The sex of God (or Goddess) is a deep question... I tried to avoid it by referring to God as "it."
As for the personhood of God, traditionally it is not that God is like humans, but that humans are like God. God is the original, not a likeness.
