Very interesting! Love spinach-artichoke dip & love stuffed pasta so this one has to taste good. One question, though... In your previous videos, you always, emphatically state NEVER to rinse your pasta because the starch is what allows the sauce to stick to your pasta yet you rinsed your pasta in this recipe. Granted, béchamel sauce is thick enough to stick unlike tomato sauce which has a higher water content, but I'm curious as to your thoughts on this. Thanks for posting this! :)

How about taking some sweet or hot Italian sausage out of the casings, rendering out the fat in a sauté pan and mixing it in with the stuffing? Top with a bolognese sauce. YUM!

Hey Chef John, I'm a first time commenter, but a long time viewer; I was wondering if there would be a chance for more party food videos? Also, those chocolate footballs looked phenomenal, but tempering chocolate still eludes me, any chance on a blog post about them?
I like your leftovers-philosophy. Basically that's my philosophy most of the time when I try to cook. I look in the fridge and think "hey, I've got ham, carrots, tomatoes, onions and some feta. What can I make out of this?" I throw it together with some pasta and hear praises all evening from my roomies. And each time I'm amazed that it actually tastes good though I had no plan whatsoever. XD
on a ski trip once we had a bunch of left overs and we made breakfast burritos with corn tortillas, eggs and leftover meatloaf, cheese and salsa on top. i swear. i don't even really like meatloaf or eggs and that was the best breakfast burrito ever.
@foodwishes cottage cheese maybe? I think cream cheese would give it a nice little zing and I would probably try to top it with a nice alfredo sauce and sprinkle it with shredded mozzarella cheese before baking it, so many ideas you could do, thats the wonderful thing about cooking, lots of options, love your vids and your recipes even more! keep up the great work!!!!!!!!!!!!!!!
