  • With all due respect, Louis might aughta watch a video or two of how 'fishermen' clean a fish, then ask the cameraman not to block of the very thing he was trying to show. Perhaps a quick video/pictorial explanation of the spine, head, guts to avoid, and how, and where to put the knife, and why, to avoid these. Then this video would accomplish the simple idea of 'filleting fish', so quickly, and easily, that you'd rarely, if ever, consider any other way. Really, please look for it (!)

  • How is this guy a chef? I use the be cook a cook in higherend resturant we did doversole on regulaer basis, it took me less then a min and always came out perfect,

    As you do NOT START FROM THE FINS

    You can start from the head then go down the gut side or from the thick side of the head .

When i went to the Le Cordon Bleu Minneapolis/Saint Paul. Every chef did a precise slow presentation so you could get a good, clear idea on how to do the actual task that they were showing. The title of this video is not the fastest way to fillet a fish.

  • He had it scaled? Flounder has the softest scales I've ever seen. This is a poor example of how to fillet a flounder. Clearly a dainty chef and not a fisherman.

  • I'm very interested in these micro 'how to' videos, I think you did a great job. Frustrating: camera angles, much of the time (starting about 2:20) your left hand hides the cut---the camera should have been on the other side. Hope you'll do more of these---they ae very valuable I think.

  • i highly doubt it cus even though his technique is pretty odd its still a very good filet and plus unless you've been fileting fish since you were 7 i doubt you filet better than he does
