@bignicks124........Red rice is best made with short-grain or sticky rice........a much different appearance from long-grain rice.

@azlexina1.....Hmmm, I was born and raised on Guam........there is more to red rice than achote and rice. However, achote seeds are the preferred choice for making red rice. Such seeds are not readily available world wide and spoil quickly.

The chamorros' just put achote and rice together and cook it.

I didn't grow up on the island, but my dad was chamorro.  I haven't had red rice for a long time.

I fell in love with red rice and chicken! The first place I had it was the middle school connected to Sanchez High. That was back in 85-86. I really miss Guam and the food.
